Goat’s Milk Ice Cream -Mint Chocolate Chip
Nothing is better than mint chocolate chip ice cream. Especially if you are using peppermint essential oil as the natural flavor. This recipe turned out really good and the peppermint is soothing for the tummy.
Makes 1 quart
- 2 large eggs
- 1/4th cup sugar
- 2 teaspoons vanilla extract
- 1/2 cup chocolate chips or chunks
- 4 drops Peppermint Essential Oil
- 3 1/4th cups raw goats milk
- 1/4 cup heavy cream
- 1-2 tablespoons collagen hydrolysate
Whisk the eggs until the white and yolk are well blended then add sugar, vanilla extract, peppermint essential oil, collagen hydrolsate and chocolate chips. I threw then chips in the food processor for a second to make them a little smaller before adding them.
Continue to whisk the mixture and slowly add the cream, and milk; avoid frothing the mixture.
Pour the mixture into your ice cream maker and churn according to the directions.
