Goat’s Milk Ice Cream -Lavender
Lavender is the perfect summer flavor and we just happen to have several plants in bloom now. I decided to make a lavender ice cream utilizing the lavender flowers and lavender essential oil. The result is awesome! I’m thinking this would be a nice relaxing before bed snack. I’m easily distracted, so while I was harvesting some lavender for this recipe I snapped a picture of one of our prickly pears that is in bloom. We will be having fruit in the near future!
Makes 1 quart
- 2 large eggs
- 1/4th cup sugar
- 2 teaspoons vanilla extract
- 2 teaspoons lavender flowers
- 2 drops lavender essential oil
- 3 1/4th cups raw goats milk
- 1/4 cup heavy cream
- 1-2 tablespoons collagen hydrolysate
Whisk the eggs until the white and yolk are well blended then add sugar, vanilla extract, collagen hydrolsate, lavender flowers and lavender essential oil
Continue to whisk the mixture and slowly add the cream, and milk; avoid frothing the mixture.
Pour the mixture into your ice cream maker and churn according to the directions.
